Japan Matsuri Presents… How to Make Okonomiyaki with the Sozai Cooking School


In this free cooking master class from the Sozai cooking school, you can try your hand at making your very own okonomiyaki – and just in time for dinner! This recipe requires just a few simple techniques and ingredients, and you’ll be on your way to the authentic taste of Japan from the comfort of your very own home. 50g plain flour
½ tsp dashi powder (omit if not available)
60ml water
1 egg
1 cup finely cut cabbage (prepare and cut before the lesson streams, pointed cabbage is best)
1tbsp spring onion, finely chopped (prepare and cut before the lesson)
100g thinly sliced meat, seafood, or vegetable toppings of your choice

Sauce and toppings
Mayonnaise (kewpie or other brands)
Okonomiyaki sauce (can be found in Asian supermarkets and some larger grocery stores)
Katsuo-bushi dried bonito flakes (can be found in Asian supermarkets, omit if not available)
Aonori seaweed flakes (can be found in Asian supermarkets, omit if not available)


This masterclass is taught by Kinu Yukawa, who is a food stylist and private chef from Kobe, Japan. Trained at the Ecole Ritz Escoffier in Paris, and in traditional Japanese cuisine in Kyoto, she believes Japanese food’s simplicity can be enjoyed by all five senses.
